5 Pumpkin Spice Breakfast Pairings to Try This Fall at Loaded Cafe

5 Pumpkin Spice Breakfast Pairings to Try This Fall at Loaded Cafe

You know the feeling. The air finally has a bite to it, you dig out the hoodie that's been folded in the back of the closet for most of the year, and something in your brain quietly announces: it's pumpkin season.

So you get the latte. Warm cup, cinnamon on top, first sip, instant serotonin.

And then you just… hold it. Standing there. Because nobody ever tells you what to eat with it.

That's a shame, because a pumpkin spice breakfast is only half-built when it's just a drink in your hand. Pumpkin spice is a flavor with opinions. Warm, a little sweet, heavy on cinnamon and nutmeg, with that clove note in the back that makes everything taste like a Sunday. Put it next to the wrong plate and it flattens out. Put it next to the right plate and both things get better.

We've argued about this behind the counter more than we'd like to admit, over the hiss of the griddle and somebody's four-year-old negotiating hard for extra whipped cream.

Here's where we landed.

1. Pancakes the pairing that started the argument

Everybody wants pumpkin spice pancakes the second the season turns. Here's the thing nobody says out loud: the pancake doesn't need to be pumpkin flavored at all.

When your drink is already carrying cinnamon and nutmeg, the plate's job is to be soft, buttery and a little plain, so the spice has somewhere to land. The drink is the loud one. The plate is the friend who lets it talk.

Order this: the Pancake Combo. Eggs of any style, hashbrowns, your pick of bacon or sausage, and a full stack.

The bacon matters more than you'd think. Salt cuts sweetness. One bite of smoky bacon, one sip of latte, and your mouth resets instead of getting sugar-tired halfway through the stack.

Also worth a look:

  • Chocolate Chip Pancakes — chips baked into the batter, more on top, powdered sugar and whipped cream. Chocolate against warm spice is Mexican hot chocolate logic, and it lands.

  • Kids Pancake Combo — smaller stack, same idea, reliably quiet table.

2. Waffles: the crispy edge problem, solved

Here's what pancakes can't do: texture.

Soft plate against soft drink is lovely for four bites, then everything blends into one warm mush. This is where waffles change the rhythm completely. The ridges snap when you cut them. The pockets hold butter and syrup like tiny reservoirs. Crunch, then cream, then spice, and suddenly your mouth is interested again.

To be clear, the waffle itself isn't pumpkin spiced, and it doesn't need to be. The latte brings the cinnamon and nutmeg. The waffle brings the crunch. If you want the spice baked into the plate itself, that's what our Pumpkin Spice Pancakes and Pumpkin Spice Stuffed French Toast are for. This pairing is about contrast.

Order this: the Waffle Combo. Eggs, hashbrowns, bacon or sausage, and a full waffle. Savory on one side of the plate, sweet on the other, spiced coffee sitting in the middle doing the work of tying it together.

Also worth a look:

  • Strawberry Cheesecake Waffle — fresh strawberry slices and our homemade sweet cheesecake, finished with powdered sugar and whipped cream. Strawberry against pumpkin spice sounds wrong on paper. It isn't. The berries keep the cinnamon from going heavy on you.

  • Strawberry Banana Nutella Waffle — no further comment needed.

3. Brioche French toast the one we'd order for ourselves

If you try one thing on this list, make it this one.

French toast is already halfway to pumpkin spice. Eggy, custardy, dusted with cinnamon before it ever reaches your table. This isn't a contrast play, it's a doubling down, and it tastes like autumn decided to become breakfast.

Order this: the Original Brioche French Toast, topped with cinnamon sugar, powdered sugar and butter.

Brioche is the whole secret. It's a richer, more buttery bread than standard sandwich slices, so it drinks up the custard without collapsing into a soggy mess. The outside caramelizes into something almost crackly. The inside stays like pudding. Cut into it while it's still steaming and the cinnamon comes up at you before the fork does.

Also worth a look:

  • Caramel Churro Stuffed French Toast — sweet cream cheese, caramel drizzle, cinnamon dusted over the top. Churro and pumpkin spice come from the same family, so they sit together like old friends.

  • Dulce de Leche Stuffed French Toast — sweet cream cheese, fresh strawberries and banana. Caramelized milk plus warm spice is genuinely underrated.

4. Conchas our favorite in the whole lineup

Now the one that makes this list ours and not everybody else's.

A concha is Mexican sweet bread with a crackly sugar shell scored on top like a seashell. Soft underneath, barely sweet on its own. And in Mexican homes it's been eaten alongside coffee and café de olla for generations, which means it was paired with warm spice long before pumpkin spice ever had a hashtag.

The technique is one step: dunk it. The bread drinks up the coffee, the sugar shell softens, and you understand immediately why people have been doing this forever. Come in when we're busy and you'll catch it happening at three tables at once, nobody making a thing of it.

Order this: the Strawberry Banana Nutella Concha, our famous concha loaded with fresh strawberry slices, banana, Nutella and whipped cream. If you want the full plate around it, there's the Concha Combo.

Keep an eye on our homepage too. We've been running a free concha offer. Cheapest possible way to find out whether you're a concha person. You probably are.

Hunting for autumn brunch ideas that don't look like every other coffee shop's menu? Lead with this one. Bring a friend who's never had a concha and watch their face while they figure it out.

5. Go savory the sweetness reset

Not everybody wants a sweet breakfast. And sweet-on-sweet-on-sweet gets tiring by pairing number four. There's a point around the third bite of whipped cream where your body starts asking questions.

So here's the curveball: put some heat next to that latte.

Chile and cinnamon are old friends, paired for centuries in mole and hot chocolate. The spice heats your mouth, the creamy drink cools it back down, and you fall into a loop where every bite wants a sip and every sip wants a bite. Dangerous, in the best way.

Order this: Chilaquiles and Eggs, with freshly fried tortilla sautéed in your choice of red spicy, red mild, green spicy or green mild, depending on how brave you're feeling.

Also worth a look:

  • Chorizo & Eggs — pork chorizo, Mexican rice, jalapeños and our slow-cooked beans topped with cotija.

  • Machaca Breakfast Burrito — shredded beef, eggs, peppers, onions, tortilla strips, hashbrowns and cheese, all wrapped into one thing you can eat one-handed in the car.

Build your own plate

Once you see the pattern, you can put your own combination together from our fall breakfast menu without overthinking it:

  • Something soft to absorb the spice — pancakes, French toast, crepes

  • Something crisp for contrast — a waffle, hashbrowns, country potatoes

  • Something salty to reset your palate — bacon, sausage, chorizo

  • Something to dunk — a concha, a piece of toast

Two out of four is a good breakfast. Three out of four and you'll be telling somebody about it later.

One last tip from behind the counter: order your coffee first and let it sit while the kitchen works. A scalding drink numbs your tongue and you'll miss half the nutmeg. Let it cool a little and the spice opens right up.

A few things people ask us

Do I have to order coffee for these to work?

Not at all. Horchata is a genuinely excellent stand-in rice-based and cinnamon-forward, so it hits a lot of the same notes. Hot chocolate works too, especially if you're bringing kids.

What if I don't actually like pumpkin spice?

Plenty of people don't, and nobody here will judge you. Every pairing above still works with regular coffee, because what you're really balancing is sweet against salt and soft against crisp.

Which one should I get if it's my first time here?

The French toast. It's the least risky order on the menu and the most likely to bring you straight back.

Can I get any of this to go?

All of it. The burrito travels best by a mile. Anything straight off the griddle is happiest eaten soon after it leaves the kitchen, so if you're driving more than a few blocks, that's worth knowing.

Is there anything for a group?

Plenty. The combos are built for passing plates around, which is honestly how we'd do it. We cater too, so if you're feeding an office, let's talk.

Come sit down for a while

You'll find us in Gardena, Long Beach, Lawndale, Bellflower, Bell, Orange, Placentia and both Santa Ana locations, with Norwalk on the way.

Order pickup or delivery if you're moving fast, we get it. But if you've got time to spare, take it. Get the booth by the window. Let the coffee go from too-hot to just-right. Talk about nothing important. Order one more concha than you strictly need, then split it anyway.

That's the whole point of fall, really. Slowing down enough to notice how good something tastes.

See you soon.
